30 basil leaves or 15 culantro (spiny or long leaf coriander) leaves
1/3 cup minced green onions, green and white parts (3 scallions)
1 tablespoon rice vinegar
1 teaspoon salt
¼ teaspoon pepper
½ cup thick yogurt
1 tablespoon oil
Method
Process garlic, parsley, cilantro, cilantro, culantro (spiny or long leaf cilantro), Green onions, vinegar, salt and pepper to a fine mince, about 2 minutes. Remove from processor and transfer to a bowl.
Mix with Yogurt (Dairy or Vegan), drizzle with oil and serve.
If you desire to process all ingredients and it becomes a bit runny, place processed greens over a paper filter and drain for 10 min.Then continue with yogurt.
