Ingredients
  • 1 ½ cups sliced romaine lettuce
  • 1 ½ cups sliced spinach
  • 1 ounce parmesan shavings
  • 2 tablespoons Green Vinaigrette (pg. 56)
  • *Green Vinaigrette
  • Chopped mixed fresh herbs 4 tablespoons
  • Fresh Orange Juice 4 tablespoons
  • White Wine vinegar 1 tablespoon
  • Honey or sugar substitute ¼ teaspoon
  • Olive oil 2 ½ tablespoons
  • Salt ¼ teaspoon
  • Pepper 1/8 teaspoon
Method
  • Mix all ingredients and serve at once.
  • If taking your salad to the office, place dry greens on one container and dressing with vegetables, nuts, fruit and protein in another container.
