Ingredients
1 ½ cups sliced romaine lettuce
1 ½ cups sliced spinach
1 ounce parmesan shavings
2 tablespoons Green Vinaigrette (pg. 56)
*Green Vinaigrette
Chopped mixed fresh herbs 4 tablespoons
Fresh Orange Juice 4 tablespoons
White Wine vinegar 1 tablespoon
Honey or sugar substitute ¼ teaspoon
Olive oil 2 ½ tablespoons
Salt ¼ teaspoon
Pepper 1/8 teaspoon
Method
Mix all ingredients and serve at once.
If taking your salad to the office, place dry greens on one container and dressing with vegetables, nuts, fruit and protein in another container.
