Ingredients
  • 1 pound of dry lentils
  • 1 red pimento
  • 4 cups veggie stock
  • 1 teaspoon paprika
  • 1/4 Guiso or Seasoning sauce recipe ( page 148)

  • 4 medium onion
  • 1 teaspoon olive oil
  • 4 garlic cloves
  • 6 tomatoes, 1 1/2 pound, diced
  • 6 aji or 1 red pimento, unseeded 1.7 ounces
  • 4 tablespoon cilantro, diced
  • 1/4 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
Method
  • Wash the lentils with plenty of water and place in a medium pot with 4 cups of vegetable stock or water, add the red pepper and paprika; cook for 25 minutes over medium-low heat. The lentils should be soft but not mushy since they must still cook with the guiso.
  • While the lentils cook, make the guiso or defrost if frozen.
  • Add the guiso to the lentils, and cook over medium-low heat until the lentils have s°Ftened completely without loosing their shape, about 45 minutes to one hour.
  • Taste for salt and serve.
