Ingredients
2 small pita bread, sliced (2 1/2 inch
3 tablespoon yogurt spread two herbs
6 ounces roasted veggies (onions, pimentos, mushrooms and eggplants)
2 ounces feta cheese shredded
* Yogurt Spread Two Herbs, 2 servings - 1 tablespoon each
2 tablespoon low - fat plain yogurt
1/2 teaspoon thyme
1/2 teaspoon diced cilantro
pinch of salt and pepper
Method
Mix roasted veggies and Two Herbs Yogurt (Dairy or Vegan) Spread. Divide onto two pita halves, sprinkle cheese, cover with pita. Serve cold or warm.
