Prep in seconds with pulled chicken.
Decrease carbs by cutting off the ends of the wrap
Ingredients
3 oz. shredded cooked skinless chicken breast one 8-10-inch whole wheat wrap
1 cup arugula
¼ cup diced tomato
¼ cup diced, peeled and seeded cucumber
2 tablespoon sliced black Kalamata olives (or pecans)
2 tablespoon Creamy Wine Vinaigrette (pág. 53)
*Creamy wine vinegar
3 tablespoon plain yogurt
2 tablespoon white o red wine vinegar
2 tablespoon olive oil
1/4 teaspoon honey or sugar substitute
1/4 teaspoon salt
1/8 teaspoon pepper
Method
Place cooked chicken, arugula, tomato, cucumber, olives and dressing in a bowl and mix. Spread over wrap and hold together with toothpick.
Serve cold or place in toaster oven for 2 to 3 minutes. Cut into 3 parts and serve.
