Ingredients
  • 3 oz. shredded cooked skinless chicken breast one 8-10-inch whole wheat wrap
  • 1 cup arugula
  • ¼ cup diced tomato
  • ¼ cup diced, peeled and seeded cucumber
  • 2 tablespoon sliced black Kalamata olives (or pecans)
  • 2 tablespoon Creamy Wine Vinaigrette (pág. 53)
  • *Creamy wine vinegar
  • 3 tablespoon plain yogurt
  • 2 tablespoon white o red wine vinegar
  • 2 tablespoon olive oil
  • 1/4 teaspoon honey or sugar substitute
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
Method
  • Place cooked chicken, arugula, tomato, cucumber, olives and dressing in a bowl and mix. Spread over wrap and hold together with toothpick.
  • Serve cold or place in toaster oven for 2 to 3 minutes. Cut into 3 parts and serve.
